My husband loves this dessert! Banana custard is so quick and easy to make, especially if you make the sauce in the microwave. Raspberry, strawberry and black currant jam are the ones we prefer in the bottom of the dish, but why not experiment?
Serves 2 - so you might want to double the quantity
Preparation time: 3 minutes
Cooking time: about 8 minutes, in a 750w microwave (cooking times will vary for a higher or lower wattage microwave)
Custard forms a skin very quickly when cooling. In “proper” (i.e. staged) food photography, they usually use yellow paint for custard, as it looks smooth and glossy! “Proper” food photographs would also have used a lit cigarette behind the dish to give the appearance of steam.
Ingredients and Shopping List.
- 2 ripe bananas
- 1-2 tablespoons (15-35g) jam
- 2 tablespoons (35g) custard powder
- 1-2 tablespoon (15-35g) sugar
- 1 pint (568ml) milk
To serve:
- A little cream
Method.
- Put the custard powder in a bowl with the sugar.
- Mix to a smooth paste with 2 tablespoons of milk, taken from the pint.
- Add the remaining milk and mix thoroughly.
- Heat in the microwave for 6 minutes, stirring half way through the cooking time.
- Meanwhile, smooth the jam at the bottom of the serving dish.
- Add the chopped banana.
- Top with the hot custard.
Serve hot or cold, with a little cream, if liked.
Note:
The thickness of the custard can be varied (by adding more or less milk), to your taste. You can also adjust the amount of custard you like - some people like more, others less.
