It needs a sauce with it, so I make that in the microwave to cut down the washing up. You can vary the stuffing mix - ones with apricot and apple are good, as well.

Preparation time: 5 mins

Cooking time: 45 -55 minutes, depending on the size and thickness of the steaks.

Ingredients and Shopping List.

For the white sauce:

  • 250ml (half a pint) milk
  • 15g (half an ounce) cornflour
  • black pepper to taste
  • Chopped fresh or dried parsley (optional)

Method.

  1. Pre-heat the oven - 180C or Gas Mark 4.
  2. Cover a baking tray in foil and lightly oil the surface.
  3. Wash and dry the steaks.
  4. In a glass measuring jug, beat the eggs with a fork and pour onto a plate.
  5. Empty the stuffing mix onto another plate.
  6. Dip each steak into the beaten egg, coating both sides.
  7. Then transfer to the stuffing mix, coating both sides.
  8. Place on the foil and pop in the oven.
  9. Meanwhile, pour the left over egg and stuffing mix back into the measuring jug.
  10. Add sufficient boiling water to make into a moist stuffing and mix well.
  11. Allow to stand.
  12. About 15 minutes before the pork is cooked, make this stuffing mix into balls.
  13. Pop onto the baking tray. Cook and serve the stuffing balls with the pork.

Serve with vegetables of your choice.

To make the sauce:

Blend the milk with the cornflour in the jug you made the stuffing in (no need to wash it first, as the stuffing mix adds a little more flavour!)
(Instructions vary for each microwave, depending on power, so check your manual).
Once thickened, add pepper and parsley to taste.

As a family, we like quite a lot of sauce, so I would be tempted to double this quantity, although half a pint of pouring sauce is the usual estimate for 4-6 people.
