Good, tasty and fillingChicken in Cider is another of the I make up to cook with the and then re-heat mid week. I love it when the chicken is just falling off the bone! It smells so good as it cooks, and tastes even better! I leave this dish for my husband if I have a Parents Evening etc, where I won’t be home until very late. The vegetables are all included and all he has to do is thicken the sauce, so it’s a good tasty meal for him. I don’t put the in if I am intending to reheat it.

One of my favourites

You can make this as mild or as hot as you like. You can also use , or if you prefer and adapt the time accordingly.

I had expected to be home quite early tonight, in time to reheat this and make a Fresh . As it was a really miserable morning, pouring with rain, I decided to put the curry in the oven, and set the automatic timer. I  had soaked the ingredients for a salad overnight, so that it could cook at the same time as the curry and be ready for tomorrow, when I know I will be late home. I had this vision of being really relaxed, with  the cooking well under control!

It didn’t work out like that! An unexpected meeting meant that I was really late. How grateful I was for a little forward planning and a hot meal within minutes of getting home. We ate the dried fruit salad tonight, as well! By the way, read the label on the dried fruit salad packet. I was very surprised to see that the one I had been thinking of buying in one shop had sulphur in it as a preservative!

5 minutes pre-cooking preparation

1-2 hours to cook, depending on the size of pieces used and the type of casserole dish. I usually use jumbo chicken legs and cook these in a covered Le Creuset casserole dish for two to two and a half hours on the bottom shelf of the oven, as I am cooking the . 5 minutes to prepare – 1 hour to cook     

       I added too many peas

So quick to prepare and so tasty! Delicious served  hot with creamed potatoes, or rice and vegetables of your choice. Alternatively, serve cold with salad.

This smelt wonderful as I came home late, as is usual on Monday. Yesterday, I had cooked the version detailed at the end of this post. All I had to do today was cook some veg.  As you can see, I was a bit generous with the peas!  There’s a lot more to this than meets the eye! No wonder they often have ten dishes to photograph and then choose the best one! We had to go with this one, as the other chicken portion fell to pieces as I took it out of the ! Having watched the programme on the esbl e-coli on Channel 3, I was really glad the chicken had been so well-cooked!

For pudding, we had Bananas and Cream. All very quick and easy. What made me feel really virtuous was preparing the for lunch tomorrow as the peas cooked! I just knew I wouldn’t want to make them after we’d eaten! Read more »
