Do you ever come home from work tired out, feeling that it really is just too much effort to cook? Or, have you run out of ideas for family meals and just churn out the same old dishes all the time?
I understand how you feel. I, too, work full time, as a Food and Textiles teacher. I love my job! Sometimes, when I have been working with food (and children cooking all day!), the last thing I want to do when I get home is cook!
Over the last few years, many colleagues have asked me for the recipes for the quick and easy meals I cook in the evenings. Rather than using books, they wanted recipes they knew would work. Their response has been so positive and the idea for this blog has come from them! Here, then, are some of those recipes.
I have a few simple rules:
Dishes must be quick to prepare. No dish must take longer then 20 minutes prep time (though it may take longer to cook) and preferably only take 5 mins prep time.
The dishes must be really tasty, nutritious and colourful.
The ingredients must be readily available in the supermarket, so that shopping is quick and easy
If I’m spending 20 minutes preparing the main course, the pudding must be really, really quick to prepare (see hints and tips).
